Rice crackers are crisp snacks made from rice rather than wheat. In Japan they are known as senbei, usually made from regular rice, or arare and okaki, made from glutinous rice; they are baked or grilled, then brushed with soy sauce or dusted with seasoning. The rice crackers reviewed are Dozo, a Japanese-style brand from Berli Jucker Foods in Thailand, made from short-grain rice in flavours such as Original, seaweed, sweet chilli, sausage and corn cheese, and one mixed with sweet potato.
Rice contains no gluten, but soy-sauce glazes are often brewed with wheat, and seasonings may add milk or seafood.
