Pastry is a dough of flour and fat that bakes into a tender, flaky or crumbly crust, often wrapped around a filling. In Thai and Chinese bakery traditions, small filled pastries such as khanom pia, with mung bean, durian or coconut fillings, are a popular snack and a classic gift.
The example is Alice’s Coconut Mochi from Alice Bakery & Foods in Thailand. Despite its English name, its Thai name describes a khanom pia with condensed milk and coconut filling, and its ingredients are wheat flour, sweetened condensed milk and shortening rather than glutinous rice. The same snack also appears under cakes.
It contains gluten and milk, and the label lists colours and preservatives by INS number.
