Whole milk powder (full-cream milk powder) is made by evaporating and spray-drying whole milk, so it keeps the milk’s fat. Under Codex standards it contains at least 26% milk fat. That gives it a richer, creamier taste than skimmed milk powder, but also a shorter shelf life, because the fat can slowly oxidise.
In biscuit creams and chocolate fillings it adds a full dairy flavour and a smooth mouthfeel. Hello Panda - Biscuits with Milk Flavoured Filling uses both whole and skimmed milk powder in its milk cream, combining the richness of one with the clean milkiness of the other. It is also part of Wall’s Vanilla and Milk Flavoured Ice Cream in Chewy Mochi, together with cream and butter.
It is a dairy ingredient containing milk proteins, a major allergen, and lactose.
