Skimmed milk powder (also called skim milk powder) is made by separating the cream from fresh milk and spray-drying the remaining skim milk. Under Codex standards it may contain at most 1.5% milk fat, against at least 26% in whole milk powder. What is left is mostly lactose, milk proteins and minerals.
With so little fat it keeps well and mixes easily into doughs, creams and coatings. It gives a clean milky taste, helps biscuits brown in the oven, and adds body to frozen desserts such as Corner Chocolate Flavoured Ice Cream In Sandwich Wafer. In milk chocolate like M&M Peanut Chocolate it supplies the milk solids, while cocoa butter and other fats provide the richness that the skimmed milk lacks.
It is a dairy ingredient, so it contains milk proteins, a major allergen, and lactose.
