Salted egg yolk powder is made from the yolks of salted eggs, traditionally duck eggs cured for several weeks in brine or in a salty paste of clay or ash. Curing firms the yolk and turns it deep orange; the yolks are then cooked, dried and ground into a powder that can be dusted onto snacks or blended into a seasoning.
The flavour is rich, salty and savoury, with a slightly sandy texture that coats the tongue.
