Salt is sodium chloride, obtained by evaporating seawater or mining rock salt. In snacks it does more than make things salty: it sharpens other flavours, tones down bitterness and balances sweetness. Salt also binds water so that less of it is available to microbes, one of the oldest ways of preserving food. Thai salted plums like Fuji Plum - Salted Cured Plums and baked or seasoned squid snacks rely on it for both taste and keeping quality.
Many labels name iodised salt, which has iodine added; Thai rules generally require foods made with salt to use iodised salt, with a few exceptions. Salt is the main source of the sodium shown on the nutrition label.
