Iodized salt chunk is coarse-grained iodized salt: larger crystals of salt with added iodine, the same product as fine iodized salt but in bigger pieces. The Thai name on the pack translates roughly as “iodine-fortified edible salt grains”. Coarse salt dissolves more slowly, so instead of seasoning evenly it gives small bursts of saltiness as you bite.
That suits Thai fruit snacks dressed with sugar, salt and chili. Doi Kham Savoury Guava with Chinese Apricot Flavor uses both forms: 1% iodized salt chunks and 0.4% fine iodized salt, along with sugar, Chinese apricot powder and chili. The pairing suggests chunks for texture and fine salt for even flavour.
Like all edible salt sold in Thailand, the coarse grains must contain iodine, at 20 to 40 mg per kilogram. Apart from their size, they are simply salt.
