INS 410 is carob bean gum, known in many countries as locust bean gum, and numbered E410 in Europe. It is a galactomannan, a type of soluble fibre, milled from the seed endosperm of the carob tree (Ceratonia siliqua), which grows around the Mediterranean. Codex lists it as an emulsifier, stabilizer and thickener.
The gum needs heat to dissolve fully, after which it gives a smooth, creamy body. On its own it does not form a gel, but combined with xanthan gum or carrageenan it creates an elastic gel, a synergy food makers use widely.
In ice cream such as the Corner chocolate ice cream sandwich it slows the growth of ice crystals, keeping the texture smooth. In Cororo Grape Jelly it appears alongside xanthan gum, gellan gum and gelatin, which together build the chewy texture.
