INS 332 (ii) is tripotassium citrate, usually labelled simply as potassium citrate and numbered E332(ii) in Europe. INS 332 covers the potassium citrates: (i) is potassium dihydrogen citrate and (ii) the fully neutralised tripotassium salt. Codex lists it as an acidity regulator, emulsifying salt, sequestrant and stabilizer.
It is produced by neutralising citric acid with a potassium base such as potassium hydroxide or potassium carbonate, giving white crystals with a mild, slightly salty taste. It does the same job as sodium citrate but adds potassium instead of sodium.
On SeekSnack it appears in Cororo Grape Jelly, whose label combines citric and tartaric acids with buffering salts, including this citrate and dipotassium phosphate. The acids supply the grape-like sourness, while the salts keep the acidity within the range the gelling agents need to set well.
