Butylated hydroxytoluene, or BHT, is a synthetic antioxidant closely related to BHA (INS 320). It is made from p-cresol and isobutylene and, like BHA, dissolves in fats and oils. It is INS 321 and E321, and Codex classes it as an antioxidant. Outside food it is also used to protect plastics, rubber and cosmetics from oxidation.
In snacks it helps keep frying oil and fat-rich fillings from going rancid during storage.
