Potassium sorbate is the potassium salt of sorbic acid (INS 200). It comes as white granules or powder that dissolve easily in water, which makes it more practical to use than the acid itself. Once in a food it behaves the same way, slowing the growth of moulds and yeasts. It is INS 202 and E202, Codex classes it as a preservative, and it has been evaluated by JECFA.
It is one of the most widely used preservatives for moist and semi-moist foods. On SeekSnack it appears on Party Crispy Pie Butter Caramel, on Denma’s fruit-filled cookies and on Squidy Seasoned Roller Squid Hot & Spicy, a seasoned rolled squid snack.
