On an ingredient list, fruit juice is just what it sounds like: the liquid pressed from fruit. Snack makers often use juice made from concentrate, or the concentrate itself, because it is easier to ship and store. The label does not always say which fruit it is, as with the products here.
Juice brings a fruity taste, natural sugars (mainly fructose, glucose and sucrose) and some acidity that brightens sweet fillings. In gummies it adds to the colour and fruit character, although most of the sweetness and chew still comes from sugar, glucose and the gelling agent.
Jolly Bears list fruit juice as their third ingredient (12%), after glucose and sugar, with gelatin to set them. The Euro Choco Pie with marshmallow and raspberry jam uses a smaller share, 3%, most likely for its jam layer, where pectin and citric acid also appear on the label.
