Dried potato is potato that has been peeled, cooked, mashed and dehydrated, usually on heated drums into thin sheets that are broken into flakes, or into small granules. With most of the water gone it keeps for a long time and can be turned back into a dough whenever needed. It is the same product used for instant mashed potato.
Stackable crisps are made from it: dried potato is mixed with water, flours and starch into a dough, rolled into a thin sheet, cut, fried in moulds and seasoned. Because every crisp comes from the same dough, they are uniform in shape and thickness, unlike chips sliced from whole potatoes.
