Disodium succinate is the sodium salt of succinic acid, an organic acid found naturally in shellfish, especially clams and scallops, as well as in sake and some fermented foods. In the Codex list it has the code INS 364(ii), with the functions flavour enhancer and acidity regulator. It is used mainly in Japan and elsewhere in Asia.

Succinate has a distinctive savoury, brothy taste, often described as the taste of shellfish. In seasonings it rounds out MSG and the nucleotide enhancers and adds a seafood-like depth.

On SeekSnack it is listed on Snack Jack - Original Flavor, whose seasoning combines MSG, ribonucleotides and disodium succinate.
