Dextrins, roasted starch (INS 1400, E1400) is starch that has been heated dry, usually with a small amount of food-grade acid, until its long chains break into shorter pieces. Depending on the conditions the result is a white or yellow dextrin. Dextrins dissolve more easily than ordinary starch and form less viscous solutions, which makes them useful as binders, film-formers and carriers.
Codex lists INS 1400 as a carrier, emulsifier, stabilizer and thickener. In snack seasonings it can help powders stick to the surface and carry flavours evenly. It belongs to the modified starches, and the starch source is often corn, tapioca or potato; when it is wheat, allergen rules in many countries require that to be declared.
On SeekSnack it appears on Snack Jack - Original Flavor, whose Thai label lists the same INS 1400 as a carrier.
