Cocoa mass, also called cocoa liquor or cocoa paste, is what you get by grinding roasted, shelled cacao beans (the nibs). Grinding releases the beans’ fat, cocoa butter, which makes up about half of their weight, so the result is a thick liquid that sets into a hard, bitter, dark brown block. Despite the name “liquor”, it contains no alcohol.
Cocoa mass is the starting point of chocolate: dark chocolate is mostly cocoa mass and sugar, and milk chocolate adds milk powder. Because it keeps all of its cocoa butter, cocoa mass gives a rounder chocolate flavour and a smoother melt than cocoa powder, which has had most of the fat pressed out.
On SeekSnack it appears in chocolate coatings and fillings such as Pocky Chocolate (Thailand) and M&M Peanut Chocolate.
