Butter is made by churning cream until the fat globules clump together and separate from the buttermilk. The result is about 80 percent milk fat, with some water and a little milk solids; salted butter also contains salt. Its flavour comes from the milk fat and from small amounts of natural aroma compounds such as diacetyl, especially in cultured butter.
In baking, butter gives a rich taste and aroma that vegetable fats find hard to copy. It makes cookies tender and crumbly, and in croissants, thin layers of butter folded between sheets of dough create the flaky layers. Many snacks use butter alongside vegetable fats.
Butter is a dairy product made from milk, a major allergen. On SeekSnack it is used in Denma filled cookie with fruits and in Today - Croissant Chocolate and Hazelnut & Vanilla Cream Filling.
