Butter oil, also known as anhydrous milk fat, is milk fat with nearly all of the water and milk solids removed, leaving 99 percent fat or more. It is made from cream or butter by melting it and separating the fat. It is a cousin of ghee, which is cooked further until it takes on a nutty flavour.
Because it holds almost no water, butter oil keeps far longer than butter, does not spatter when heated and is easy to pump as a liquid in a factory. It gives a clean, buttery flavour and richness, which is why it is used in caramel coatings, confectionery and bakery fats.
