Banana powder is made from ripe bananas that are peeled, pulped and dried, usually by spray drying or on heated drums, then milled into a fine, pale-yellow powder. With the water gone, it keeps for a long time and mixes easily with other dry ingredients, unlike fresh banana purée.
In snacks it gives a genuine banana taste and some natural sweetness from the fruit’s sugars. It works especially well in creams and chocolate coatings, the basis of the familiar choco-banana pairing, and it can be added to biscuit dough without making it wet.
