Salted egg is a flavour from Chinese and Southeast Asian cooking: duck eggs are cured in brine or salted clay until the yolk turns firm, orange and rich. The crumbled yolk gives a savoury, buttery, slightly sandy taste, and salted egg yolk snacks became a craze across Singapore, Malaysia and Thailand in the 2010s.
