Coconut is one of the most common flavours in Thai desserts, where grated coconut, coconut milk and coconut sugar sweeten everything from sticky rice to small filled pastries. In snacks it usually comes as a sweet filling of shredded coconut cooked with sugar, which keeps some of the flesh’s chewy texture.
The example is Alice’s Coconut Mochi from Alice Bakery & Foods in Thailand: a soft wheat pastry around a filling that is about half coconut, with sweetened condensed milk in the dough.
Coconut is not one of the main food allergens in most countries’ labelling rules, but the pastries that carry it often contain wheat and milk, so check the ingredients.
