Candy-shell chocolates are small pieces of chocolate, sometimes with a peanut or other centre, coated in many thin layers of sugar syrup that harden into a crisp, coloured shell. The process, called panning, tumbles the centres in a rotating drum while syrup is added layer by layer. The shell gives a light crunch before the soft chocolate and helps keep the chocolate from smearing when handled.
The candy-shell snacks on SeekSnack are M&M’s from Mars, Incorporated: M&M’s Milk Chocolate Candy and M&M’s Peanut. The bright shells get their colours from food colours listed by INS number on the label.
Both contain milk, and the peanut version contains peanuts and soy as well.
